A perfect cocktail for spring and summer that is fresh, unique, and made with a homemade lavender-mint syrup.
Instructions
Lavender Mint Syrup
- Put lavender flowers, sugar, and water in a small saucepan. While stirring to dissolve sugar, bring to a boil and then add mint leaves.
- Reduce heat and simmer on low for about 5 minutes.
- Transfer lavender syrup to a glass jar and let chill in the fridge. Strain out the lavender and mint after 1 hour and continue to let chill. Keep up to a week in the refrigerator.
Derby Day Cocktail
- Add all cocktail ingredients into a mixing glass. Add ice and stir until chilled. Be careful, since prosecco will want to bubble up.
- Strain into a chilled coupe or serve over ice in a low ball glass. Garnish with a lemon peel.
Ingredients
Lavender Mint Syrup
- 5-7 fresh lavender flowers
- 1/2 cup of sugar
- 1/2 cup of water
- 1/4 cup of fresh mint leaves, chopped
Derby Day Cocktail
- 1 tablespoon of lavender mint syrup
- 2 ounces of gin
- 4 ounces of prosecco or champagne, chilled
- 1 lemon, squeezed to taste
- 1 lemon peel, twisted
